How to tamp espresso correctly – the myth of tamping pressure and brew pressure
In short: Tamping is not about applying as much force as possible. What matters is a level, repeatable tamp on an evenly prepared coffee bed. Tamping force and brewing pressure are different variables and should not be confused.
What actually happens during tamping
Freshly ground coffee consists of particles of different sizes with air spaces between them. Tamping compacts and mechanically stabilizes this loose coffee bed. As force increases, the additional compaction becomes progressively smaller. There is therefore no universal kilogram value that can be considered ideal for every coffee, basket and workflow.
More important than a fixed number is keeping the tamper level and making the movement as repeatable as possible from shot to shot.
Why more tamping force does not automatically solve channeling
Channeling occurs when water finds preferential paths with lower hydraulic resistance. Possible causes include clumps, uneven distribution, local density differences, a tilted tamp, unsuitable headspace or an unfavorable combination of grind size, dose and basket.
Additional tamping force does not reliably correct such differences. If the grounds are already unevenly distributed before tamping, the tamp can partly lock that structure in place. Repeatable tamping therefore starts with controlled puck preparation.
Distribution, WDT and leveling
WDT can help break up clumps and distribute grounds more evenly when the grinder produces clumpy coffee. A leveler can help level the surface before tamping. Which steps are useful depends on grinder, coffee, grind setting and personal workflow.
None of these methods guarantees a channeling-free extraction. Their purpose is to reduce avoidable differences before tamping.
Why tamper diameter matters
The tamper base should match the actual geometry of the basket being used. If it is significantly smaller than the usable internal diameter, a larger edge area remains that is not contacted directly by the base. A larger, correctly sized base can reduce this edge zone.
The specific basket matters more than the nominal machine size. The base must not bind against the basket wall.
Tamping pressure and brewing pressure are not the same thing
The mechanical force applied during tamping does not create the brewing pressure used later by the espresso machine. During extraction, measured pressure results from the interaction of the machine’s pump or pressure-generation system, flow control, valves, the hydraulic resistance of the coffee puck and other components in the system.
Without sufficient resistance in the brew path, a typical pump machine develops much less pressure. At the same time, saying that “the machine creates no pressure, only flow” is an oversimplification: pump, control system and resistance together determine the operating point.
What does 9 bar mean?
Around 9 bar is a common reference value for many espresso machines, but it is not a universal quality target for every coffee and machine. Modern setups may use different pressure and flow profiles depending on the recipe.
In practice, brew pressure, flow, brew ratio, grind size and sensory result are better considered together than optimized as isolated numbers.
A practical tamping workflow
- choose a dose that suits the basket
- distribute the grounds as evenly as practical
- place the tamper level
- compact evenly and repeatably
- avoid unnecessary re-tamping or correction
- if problems occur, review grind size, dose, distribution, headspace and basket together
Conclusion
Tamping is an important part of puck preparation, but it is not an isolated control for the entire extraction. A defined, repeatable compaction step is more useful in practice than searching for a supposedly perfect kilogram target.
Brewing pressure is a property of the operating hydraulic system and results from the interaction of the machine, flow and resistance. Separating these two concepts makes espresso easier to dial in systematically and problems easier to diagnose.
