Water Quality – an Important Factor in Coffee Quality

Water makes up the largest share of a coffee beverage and acts as a solvent during brewing. Its mineral composition, alkalinity and other properties can therefore influence both extraction and sensory perception.

Water quality is not a single number, however. A TDS or conductivity value alone does not show which minerals are present or how they behave in a particular recipe.

1. Water as part of extraction

During brewing, water dissolves various compounds from the coffee grounds. Which substances move into the beverage and in what quantities depends on the coffee, grind size, temperature, contact time, brew ratio and water composition, among other factors.

Calcium and magnesium ions can influence extraction behaviour. Bicarbonate acts as a buffer and affects how acidity is perceived. The effect depends on concentration and the interaction of the ions, so individual minerals cannot be assigned a single flavour outcome in a general way.

2. Which water parameters matter?

Relevant parameters for coffee and coffee machines include:

  • total hardness
  • alkalinity or acid-buffering capacity
  • pH
  • electrical conductivity or TDS as indicative aggregate values
  • the composition of dissolved minerals
  • unwanted substances such as chlorine, iron or organic contaminants

Appropriate values depend on the brewing method, coffee, desired sensory profile and the technical requirements of the machine. There is therefore no single universal “perfect coffee water”.

3. Interpreting TDS and conductivity correctly

Water TDS meters often work from electrical conductivity and use it to estimate the concentration of dissolved ions. This is useful for comparisons, but it does not describe the actual mineral composition.

Two water samples with similar TDS readings can therefore contain different amounts of calcium, magnesium or bicarbonate and behave differently during coffee brewing.

4. Sensory effects

Water with very low or very high mineralization can noticeably change the character of a coffee. Alkalinity also matters because it buffers acids. Which composition works well from a sensory perspective depends on the coffee, roast and recipe.

Instead of reducing the issue to “soft water = sour” or “hard water = bitter”, it is more useful to consider the water profile together with the brewing recipe and sensory evaluation.

5. Water and the coffee machine

Water affects not only flavour but also the equipment. Depending on hardness, alkalinity and temperature, mineral deposits can form. Conversely, strongly demineralized water or water that is otherwise unsuitable for a particular machine can also be problematic in some systems.

For equipment protection, the machine manufacturer's water requirements should therefore be considered. Depending on the source water, activated-carbon filtration, softening or reverse osmosis with controlled remineralization can be suitable components of a water-treatment system.

6. Water for different brewing methods

Espresso, filter coffee, fully automatic machines and cold brew have different recipe and equipment requirements. A water profile that works well for one preparation method therefore does not have to be equally suitable for every other method.

A practical approach is to consider the source water, machine requirements and sensory target together and to document changes systematically.

Water is an essential part of the coffee recipe. Mineral composition, alkalinity and other parameters can influence extraction, flavour and machine operation.

For a meaningful assessment, individual measurements should not be considered in isolation. A useful approach combines water analysis, manufacturer requirements, brewing recipe and sensory evaluation.
